Village style White pongal rice and multi vegetables pongal gravy

Ingredients

For pongal

New raw rice -1 cup

Boiled milk -1/2 cup

Water -3 cup

Steps

Wash and soak Rice for 20 minutes.Cook all together for 2 whisle.

For gravy

Raw Mochaikai - 1 small cup. Brinjal -1 cup

Pumpkin - 2 cup. Raw Mango -1/2 cup

Broad beans -1 cup. Amla - 2

Bottle gaurd -1 cup sweet potato -1/2 cup

Yam -1/2 cup ( you can take 5 or more vegetables as per your requirement and choice )

Small onion -10

Garlic cloves -8

Tomato -1

Tamarind - amla size

Turmeric powder -1/2 tsp , Kulambu powder -4 tsp , coriander powder -4 tsp, salt

Jaggery -1 tsp

Gingerly oil -4 tsp

Curry ,coriander leaves

Mustard seeds, Ulund dhal, asafotida,red chilli , onion vadakam

To grind

Coconut ,-5 tbs, jeera - 1 tsp , onion -2 , garlic -2 , curry, coriander leaves

Grind all together into a fine paste.


Add all vegetables, Onion, garlic, tomato, turmeric, Kulambu powder and salt.Add a glass of water and allow it to boil.

Add tamarind pulp and close and switch off after 3 minutes

Add coconut paste, coriander powder, little water and allow it to boil.Add jaggery and boil for 2 minutes

In oil fry mustard seeds, ulund dhal,onion vadakam , asafotida,red chilli, curry leaves.Add this to gravy, add coriander leaves ,mix well.
